Monday Morning in the Kitchen: Baked Eggs in Ham Cups


While browsing pinterest, I found this recipe for baked egg cups.  I loved the ease and simplicity of the recipe, but ended up making an even lazier version--mainly due (we'll say) to lack of scallions and  cheese.  Leaving out the salt and pepper legitimately qualified as sheer laziness, however.  Anyway, this is a simple recipe that can easily be doctored up to be elegant.


Baked Eggs in Ham Cups

Lightly grease cups of a muffin tin.  Place one slice of deli ham in each cup.  Carefully crack an egg in each ham-filled cup.  Bake at 400 degrees for 12 minutes.


Thanks to John, who (before we even took a bite) said, "Don't you want to take a picture of this and put it on your blog?"  Bless his heart!  Surprisingly, snapping a photo hadn't even crossed my mind.

  1. I have made these as well and are a big hit....but I use bacon not ham. I had to chuckle at what your hubby said because mine says the same thing all the time!

  2. Once I get my kitchen back, I will have to make these, the laziest way possible. Perhaps using a non-stick muffin pan so I don't have to spray it? I love that our families are always thinking about our blogs for us, coming up with ways to make them better posts.

Ten Things of Thankful: April Showers Edition

  A red peony bud prepares to open fully  After an incredibly dry winter, we had a bit of precipitation this past week, in the form of falling snow. We didn't have much, and it didn't really stick, but we'll take water however it wants to come. Fortunately, my peonies seem unaffected by the cold snap, and are ready to put on a show here soon. 1. Tuesday Time to Tackle: DIY Swamp Cooler Pump Replacement

Yesterday morning, despite having the swamp cooler on all night long, we woke up to 81 degree temperatures inside the house.  John went outside to inspect and announced that the swamp cooler pump had stopped working. Fortunately, replacing the pump is a quick and simple do-it-yourself project.
