Monday Morning in the Kitchen: Crockpot BBQ Chicken

While slow cookers often simmer hearty soups and stews in autumn and winter, they also provide a way to keep the kitchen cool while cooking a summer meal.  This BBQ chicken recipe makes a delicious filling for sandwich rolls. 




Crockpot BBQ Chicken

Place boneless, skinless chicken breasts in crockpot.  Cover with BBQ sauce and cook on low for 6 hours.  (I used 4 breast halves and 1 8 oz. bottle of BBQ sauce.)  Shred chicken, and add more sauce if needed.  (I used another 8 oz. bottle.)  Continue to cook for another 30 minutes-2 hours.  Serve on sandwich rolls.

Monday Mentions: Equate Crutches

Have you ever needed crutches? I hadn't, until a week ago.  I'm pretty sure I strained a muscle while running a half-marathon.  (That sounds kind of cool, doesn't it? I'm not actually that cool; the last time I strained a muscle it was from carrying too many shopping bags at once.) In any case, I found myself in need of some crutches. I sent my husband to the store to get some.
