Monday Morning in the Kitchen: Corn, Black Bean and Tomato Salad

Summer demands cool salads.  This recipe uses fresh-from-the-garden produce.

Corn, Black Bean and Tomato Salad

Combine in a bowl:  1 can of black beans, drained and rinsed; kernels cut from 2 ears of fresh corn; 3 small tomatoes, diced; 1/3 of large onion, diced; 2 stalks of celery, thinly sliced; splash of lime juice; and salt and pepper to taste.  That's it; no dressing required!
