Monday Morning in the Kitchen: Shepherd's Pie

For fun, try asking your children which recipes they remember you fixing often.  You might be amazed.  

Today's post is at the request of oldest daughter.  

 
Shepherd's Pie

1 pound ground beef
1 onion (I used 2 shallots instead)
2 carrots, chopped
1 cup fresh cut green beans
1 tablespoon Worcestershire sauce
1 (15 oz.) can tomato sauce
1 cup water
2 potatoes, peeled and cubed
cheddar cheese to sprinkle on top

Preheat oven to 375°.  In a pan on the stove, brown the ground beef and drain the fat.  Remove beef from pan.  In a separate pot, boil the potatoes.  In the original pan, stir-fry the onion, carrots and green beans for a few minutes, then add the beef, Worcestershire sauce, tomato sauce, and cup of water.  Cover and simmer for 20 minutes.  When the potatoes are tender, drain and mash them.  Add the mashed potatoes to the top of the simmered mixture, top with shredded cheese, and bake for 15-20 minutes in the preheated oven.

  2. Oh, I love a good shepherd's pie! I was just thinking the other day how much I would enjoy some right about now. I do believe I shall make it for dinner.

    If I ask my children, I'm guessing each one would answer I make his least favorite meal too often. :)

Ten Things of Thankful: April Showers Edition

  A red peony bud prepares to open fully  After an incredibly dry winter, we had a bit of precipitation this past week, in the form of falling snow. We didn't have much, and it didn't really stick, but we'll take water however it wants to come. Fortunately, my peonies seem unaffected by the cold snap, and are ready to put on a show here soon. 1. I'm thankful for moisture. 2. I'm thankful the flowers are still going to bloom. I don't know how the colder temperatures will affect the fruit crops. The strawberries look like they are still planning to set fruit. We'll have to see what happens with the peach, apricot, pear, and apple. Yesterday morning, despite having the swamp cooler on all night long, we woke up to 81 degree temperatures inside the house.  John went outside to inspect and announced that the swamp cooler pump had stopped working. Fortunately, replacing the pump is a quick and simple do-it-yourself project.
