Monday Morning in the Kitchen: Puff Pastry for Mom (Guest Post)

Two of my girls made me breakfast in bed yesterday, and oldest daughter offered to share her recipe for the yummy puff pastry creation she served. 




Making a delicious Mother's Day breakfast doesn't have to be hard! All you need is some puff pastry dough, cream cheese, and fresh berries, and you'll be just fine. Chop, crush, blend, or otherwise smash up the berries and combine them with the cream cheese--you should have about equal amounts of cream cheese and berries in your mix. Add some sugar to taste.

Roll out your puff pastry dough, and then cut out circles from the dough. Put the circles on a cookie sheet, and spoon the cream cheese mixture into the middle of the circles. Make sure the amount isn't too generous--you need to be able to close the pastry! Fold the pastry over and pinch the edges shut, then spread an egg wash over the top of the pastry. Bake in the oven for 15 minutes at 400 degrees until the top is golden brown and cracked. Serve hot with sauce and (if desired) spoon extra berry cream cheese over the top.
Sauce: Boil some sugar in water, add blended pineapple and orange marmalade.

Ten Things of Thankful: April Showers Edition

  A red peony bud prepares to open fully  After an incredibly dry winter, we had a bit of precipitation this past week, in the form of falling snow. We didn't have much, and it didn't really stick, but we'll take water however it wants to come. Fortunately, my peonies seem unaffected by the cold snap, and are ready to put on a show here soon. 1. I'm thankful for moisture. 2. I'm thankful the flowers are still going to bloom. I don't know how the colder temperatures will affect the fruit crops. The strawberries look like they are still planning to set fruit. We'll have to see what happens with the peach, apricot, pear, and apple. Yesterday morning, despite having the swamp cooler on all night long, we woke up to 81 degree temperatures inside the house.  John went outside to inspect and announced that the swamp cooler pump had stopped working. Fortunately, replacing the pump is a quick and simple do-it-yourself project.
