Monday Morning in the Kitchen: Granola

One of my favorite breakfasts is fresh fruit topped with yogurt and granola.  This recipe is easily adapted, so feel free to experiment with different ingredients.



Granola

6 cups grains (I used 3 c. rolled oats, 2 c. steel-cut oats, and 1 c. ground flax seed)
4 cups total of nuts/coconut/sunflower seeds
1 cup dried (or freeze-dried) fruit (I used apples and strawberries)
2 tablespoons cinnamon
3/4 cup oil
3/4 cup "liquidy" sweetener (I used honey)
1 teaspoon flavoring (I used vanilla)

Mix everything together, spread out on baking sheets, and bake at 250 degrees for an hour.   Recipe fills a gallon-sized container.
