Monday Morning in the Kitchen: Easy Taco Salad



We love to eat salad in the summertime, and I love the ease of this salad.  I can't remember exactly where I read the idea of this salad, but I know it was in some Weight Watchers materials. 

Here's how to throw it together:  Take salad greens (I used a bag of premixed salad today), add in tomatoes, olives, grated cheese, avocado, cilantro, green onion, etc.  Then, add in a can or two of chili.  (That's the idea I read in the WW materials.)  Use vegetarian if you'd like to keep the fat content down.  Add salsa and sour cream if desired.  Serve with tortilla chips, or use some tortilla strips, like the ones pictured above.  Yum!  It's a filling meal and one that doesn't require heating up the oven.

  1. As soon as the weather will get summery, I'll try this salade. For now, I'm still on "winter-food". Summer is having a hard time to begin here....
    In summer I love to make a simple cucumber salad. Fresh and simple. I'm not much of a cook *Ü*

Ten Things of Thankful: I Should Blog More Often

  Tall red poppies bloom against the brick remains of an old homestead A couple of weeks ago, John and I hiked in Alpine, Utah, to see the poppy gardens near the old Lambert homestead. We knew if we waited, we would miss the peak of the flowers. Ten Things of Thankful: Oregon Edition, Part 3

  A western bluebird, sitting at the base of a house window, looks inside Thanks (1) to those who have sent well-wishes for my mom's recovery. Her wrist is healing up nicely. I met a friend from high school for lunch this past week. It was so nice to have a chance to visit with her for a couple of hours. She is one of those friends who it doesn't matter how much time has passed, we can pick right back up into meaningful conversations.
