Monday Morning in the Kitchen: Slow Cooker Chicken

I use a crock pot all the time.  In fall and winter, I love having the smell of a warm dinner cooking during the day.  In spring and summer, I love how the kitchen stays cool.  All year round, I love the fact that I can just throw something in the crock pot in the morning, and by evening, dinner is magically ready. 
 
Recently, I cooked a turkey breast in the crock pot using this recipe, and it was really yummy.  I used an 8-1/2 pound turkey breast (as opposed to the 6-7 pound one the recipe calls for), and cooked it for 2 hours on high, then 2-1/2 hours on low.  This would be a great recipe to use if you were cooking Thanksgiving dinner for just a few people. 

Inspired by the success of the turkey, I decided to try a similar recipe with a whole chicken.  I had run out of paprika, so I switched up the spices a bit.  I think I prefer the original recipe above, but this worked well, too:


Slow Cooker Chicken

1/2 c. water
1 whole chicken
1/2 T or so of olive oil
1/2 t. garlic powder
1/2 t. seasoned salt
1/4 t. chipotle chili powder (I actually used 1/2 t. but found it too spicy)
1/2 t. pepper

Pour water into crock pot.  Put chicken in crock pot.  Brush olive oil over bird.  Combine spices and rub over chicken.  Cook on low for 4 hours.

  3. I read a lot about those crock pots or slow cookers, but have no idea how it works. I'm not much of a cook (yet?) but just may look into this slow-cook-wonder-thing. Not even sure if they are sold here in the Netherlands....

  6. I tried cooking a chicken in the crock pot during the kitchen renovation. It didn't go so well. Of course, I didn't use a single spice, so we might have a reason as to why. :)

  7. I am like you -- I love using my crock pot all the time! In fact I have 3 of them in different sizes! Your chicken looks delicious and with the price of beef -- we will be eating even MORE chicken!

Monday Mentions: Equate Crutches

Have you ever needed crutches? I hadn't, until a week ago.  I'm pretty sure I strained a muscle while running a half-marathon.  (That sounds kind of cool, doesn't it? I'm not actually that cool; the last time I strained a muscle it was from carrying too many shopping bags at once.) In any case, I found myself in need of some crutches. I sent my husband to the store to get some. I shouldn't have worried. John came home from Walmart with their generic store brand of crutches, complete with instructions. First, I needed to take out a long bolt that went through the hand grip.
