Monday Morning in the Kitchen: Blueberry Sour Cream Crisp

I've mentioned before that I sometimes plan entire meals around sour cream.  Yesterday I had a bit of sour cream, and decided to make a dessert with it. (OK, to be honest, we ate it for dinner.  And maybe for breakfast this morning.)



Blueberry Sour Cream Crisp
8 cups blueberries (I used frozen)
1 c. sour cream
1/3 c. steel-cut oats
1/2 t. dried lemon peel

1 c. rolled oats
1 c. brown sugar
1/2 c. steel-cut oats
1 t. cinnamon
1/2 c. chopped walnuts
1/2 c. shredded coconut (I used sweetened)
1/2 c. butter, softened

Preheat oven to 375.  Put blueberries in 9 x 13 pan.  Combine sour cream, 1/3 c. steel-cut oats, and dried lemon peel, then stir into the blueberries.  Combine remaining ingredients and place on top of blueberry mixture.  Bake for 40 minutes.   

Do you ever make dessert a meal?  (Please tell me I'm not the only one!)

  2. Dessert for dinner? Um, yes! Sometimes on a summer night when it's just too darn hot to eat even a salad, we've been known to indulge in ice cream for dinner. it's such a neat feeling.

    I also love sour cream and I would eat it off the spoon (OK, I do when nobody's looking) all by itself. This recipe looks great and would certainly be a good way to use up berries that are slightly past their prime. Think regular oats would do just as well as the steel-cut? I know cooking time varies but I don't usually keep steel cut on hand.

    1. You could substitute flour for the steel-cut oats; I used the steel-cut oats as a thickener.

  3. Looks yummy and we have been getting blueberries in our CSA box lately! Yes to the dessert as a meal! Growing up we would always have strawberry shortcakes for dinner on Fridays, during strawberry season of course. This was when I lived in Michigan and my Mom still does it! you are not crazy! If we could get decent strawberries down here I would certainly be tempted.

  A western bluebird, sitting at the base of a house window, looks inside Thanks (1) to those who have sent well-wishes for my mom's recovery. Her wrist is healing up nicely. I met a friend from high school for lunch this past week. It was so nice to have a chance to visit with her for a couple of hours. Ten Things of Thankful: I Should Blog More Often

  Tall red poppies bloom against the brick remains of an old homestead A couple of weeks ago, John and I hiked in Alpine, Utah, to see the poppy gardens near the old Lambert homestead. We knew if we waited, we would miss the peak of the flowers.
