Monday Morning in the Kitchen: Artichokes

April brings artichoke season;  I harvested a couple from my garden yesterday.  Saturday's produce box from the co-op also contained artichokes. 


Select artichokes with tightly closed leaves.  Artichokes are simple to prepare.  Using kitchen shears, cut the leaves, trimming off the little poky partsThis step isn't really necessary, particularly with young artichokes, but it does make the vegetable look nice. 

Steam until leaves come off easily, about 30-60 minutes, depending on size.  Serve with melted salted butter. To eat, peel off each leaf, dip in the melted butter, then scrape off the tender inside of the leaf with your teeth.  Once the leaves are gone, remove the fuzzy part, then enjoy the heart of the artichoke.

  1. This is completely foreign to me. I love artichokes in recipes, such as dips or pizza, but I've never even seen a whole artichoke. So, you basically squeeze out the inside of the artichoke leaf and discard the outside? And then the heart is what you chop up and put in things? I'm sure a fresh one from your garden tastes better than anything I could get here.

  2. I love, love artichokes. I bought the first ones of the season this week for an outrageous price and we were so disappointed in the taste. Lately the artichokes we have been getting have been kind of tasteless. I'm hoping for an improvement later in the season. My asparagus is popping up and I'm harvesting some today. That's my favorite vegetable.

  6. Artichokes are wonderful! Instead of dipping in butter... I dip them into a little mayo. Yum! Sweet Potato's, baked and then put a little cinnamon and sugar on them. I love fresh raw crunchy veggies. Acorn squash, half them, poke with a fork (thru the skin) place cut side down on a glass pie plate w/little water; cook in micro wave; for around 15-20 minutes. This way they are steamed. When done, add a little butter/marg. and a Tablespoon of brown sugar. Yummy... Sorry, just can't help myself. Love me some veggies and fruits too! Newest fruit that has gotten my attention, is pomegranate. Put them into a fruit salad with out any type of salad dressing etc. Yum!
