Monday Morning in the Kitchen: After Thanksgiving Turkey Salad

Though I first ate this salad in May, I've saved the post to publish now, when everyone is trying to figure out what to do with pounds and pounds of turkey leftovers.  This recipe not only will help use up the turkey, it provides a bit of a lighter fare than typically is found during the holiday season.

 

After Thanksgiving Turkey Salad

1 cup chopped turkey breast
1 avocado, chopped
1/2 can cranberry sauce, smashed
4 hard-boiled eggs, chopped
mixed salad greens (feel free to include chopped radishes, carrots, cucumbers, etc.)
optional:  chopped walnuts
 
Combine all ingredients and toss with raspberry walnut vinaigrette, or your favorite dressing.  Enjoy!

    1. I'm out of turkey leftovers, too, so didn't actually get to make this salad in November.

  3. I absolutely love salads and that sounds delicious except I would use up some of the homemade cranberry sauce I made. Thanks for the idea!
