Monday Morning in the Kitchen: Oven-Baked Sea Bass

The farm-share delivery service that I subscribe to has recently joined up with a community supported fishery, so now not only can I pick up produce each week, I can also bring home fresh-from-the-Pacific fish.

This past weekend was the first time I had ordered fish through the CSF.  Much like the produce box, I didn't know ahead of time what kind of seafood I would receive.  When John picked up the produce box, he came home with sea bass, too.

I had never cooked sea bass before, so I searched online for a recipe.  I followed this recipe.  When I make it again, I will use the following revisions:

Oven-Baked Sea Bass

1 pound sea bass steak
1/3 cup red wine vinegar
3 garlic cloves, minced
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
fresh basil--I used 1 or 2 tablespoons

Preheat oven to 450 degrees.  Put fish in a glass baking dish.  Pour vinegar over fish.  In a small bowl, mix garlic, olive oil, salt and pepper, then rub fish with the mixture.  Bake for 15 minutes.  Sprinkle with basil and bake an additional 5 minutes.

Do you have a favorite fish recipe?

  1. I love fresh fish, but my options are quite limited since I live inland. I am eager to try your recipe on some frozen fish.

  2. You are so lucky -- we subscribe to a CSA box but seafood is not an option. But who knows, maybe that will change. I love sea bass and have always just topped it with a heavy dose of lemon pepper, butter and sliced lemons but I will definitely try it your way! Enjoy.

  5. Sea Bass is one of my favorites. When I was growing up in San Diego, my parents had a friend who frequently went sport fishing and would share what he caught with us. Lucky you!!!

  6. That looks SO delicious! I'll have to pin this recipe, always looking for yummy fish recipes. I usually make a pesto of olive oil, garlic, ginger, pinch of soy sauce and basil, cilantro and whatever other herbs I have on hand. I top with salt, pepper and sprinkle with Old Bay seafood seasoning, which is heavy paprika.

Six Sentence Story: Twist

An antique typewriter Each week, Denise at Girlie on the Edge blog posts a prompt word and invites bloggers to come up with a Six Sentence Story. It's a fun challenge for writers, and a delight for readers. Go over to her blog to read what others have written, and feel free to post your own story, too! This week's prompt: twist. ********************************* The kids who moved in next door were big kids--much older than her 3-year-old self--but they might be fun to play with, and as they were coming towards her, the idea of them being new friends seemed at least possible. She was rather shy, but she understood the basics of making friends, so when those neighbors crowded all around her and asked her what her name was, she didn't hesitate to answer.  She thought she had spoken loudly enough, but apparently her shyness got the best of her, because they didn't seem to have heard her.  "Twisty?" they asked, and recognizing she needed to be even louder, she ...

Ten Things of Thankful: Lovely Autumn

I've mentioned before, but it bears repeating, that I love fall.  This week I noticed the following:

Ten Things of Thankful: Valentine's Day is in Spring Edition

Despite what the groundhog predicted, here in my neck of the woods we have been enjoying balmy weather.  I think the nation needs a west coast groundhog to provide the local forecast.  I've spent time in my backyard this week, pruning palms and roses, pulling weeds, and planting raspberries and lilacs.  For those of you still buried in snow, I offer a hopeful glimpse of weather to come:
