Monday Morning in the Kitchen: Crock Pot Cheesy Potato Soup

Today's recipe comes as an answer to my youngest son's request for more crock pot recipes.  Cheesy Potato Soup is easy, delicious, and economical, too.



Cheesy Potato Soup
In a 4-quart crock pot, combine: 
6 potatoes, peeled and chopped
1/2 onion, chopped
2-1/2 cups water
2 teaspoons salt
1 teaspoon garlic powder
1 tablespoon parsley flakes
1/2 teaspoon pepper
Cover and cook for 4-1/2 hours on high, or 8-9 hours on low.  Then add:
1-1/2 cups shredded cheddar cheese
1-1/2 cups milk
Continue to cook for 30-60 minutes.  Use a potato masher or immersion blender to puree soup, if desired.

  1. I love potato soup but have never made it with cheese. Instead, I enjoy it with a grilled cheese sandwich.

  2. This recipe is very simliar to my potato soup (minus the cheese). I usually make this dinner on a cold day and it makes great for leftovers :d
