Monday Morning in the Kitchen: Frosted Shortbread Lemon Bars

As I've mentioned previously, I belong to a produce co-op.  The last box I received contained fresh lemons.  I decided to use some to make lemon bars.



Frosted Shortcake Lemon Bars

For shortbread crust:
Combine 1 c. butter, 2-1/4 c. flour, 1/2 c. brown sugar, and 1/2 tsp. salt.  Mix until crumbly and press into a greased 9 x 13 pan.  Bake at 350 degrees for 20 minutes.  Let cool.

For filling:
Mix until well-combined: 4 eggs, 1-1/2 c. sugar, 1/4 c. flour, 3/4 c. lemon juice, 1/2 tsp. almond extract.  Pour on top of cooled crust, and bake at 350 degrees for 25 minutes.  Let cool.

For frosting:
Mix 1/2 c. butter, 2 c. powdered sugar, 2 T. plus 1 tsp. milk, 1 T lemon juice.  Spread over lemon bars.  Store in refrigerator. 

These are very rich and sweet.  These bars may be dusted with powdered sugar instead of frosted, if desired.

    I've always used powdered sugar on the top. I might try frosting them next time.

  6. I am definitely trying this one. I love all things lemon but the shortbread in this sounds much richer than most lemon bars. You can't have too much butter!

  7. I LOVE lemon bars. I look forward to a tin full of them each Christmas from my Mama. Thanks for the recipe. I live about 10 miles from a little citrus town called Lemon Cove so I think I can muster up some fresh lemons and try this soon. Thanks!

  Grand Prismatic Spring in Yellowstone National Park, as viewed from an overlook I apologize for not commenting on your blog posts this past week; John and I took a vacation to Yellowstone National Park, leaving behind our computers and, to a large extent, cell phone service. We escaped the outside world and just spent time in nature. The crowds were minimal (though we did mask up whenever we passed someone on the trails) and we spent our days hiking, taking photos, and watching geysers erupt. Today, we are back home and back to work, and, in the case of my computer, back to old shenanigans like not letting me import my photos. Monday Mentions: Equate Crutches

Have you ever needed crutches? I hadn't, until a week ago.  I'm pretty sure I strained a muscle while running a half-marathon.  (That sounds kind of cool, doesn't it? I'm not actually that cool; the last time I strained a muscle it was from carrying too many shopping bags at once.) In any case, I found myself in need of some crutches. I sent my husband to the store to get some. I shouldn't have worried. John came home from Walmart with their generic store brand of crutches, complete with instructions. First, I needed to take out a long bolt that went through the hand grip. Then I needed to find my height range, push down two metal pieces, and slide the crutches until the little metal pieces came up in the hole near my height range. (Having two people for this
