Monday Morning in the Kitchen: Mom's Sugar Cookies


Though cookie cutters come in various designs, it seems I only make sugar cookies at Christmastime.  And though I'm sure there must be more than one sugar cookie recipe, this is the only one I use.  If you still need cookies for Santa, this is a good recipe to try, as the dough does not need to chill prior to rolling out to cut.


 
Mom's Sugar Cookie Recipe
(needs no chilling prior to rolling out)
 
1-1/2 cups sugar
1 cup butter
3 eggs
1 teaspoon vanilla
1/2 teaspoon lemon extract
4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
 
Cream together butter and sugar.  Add eggs and beat until fluffy.  Add vanilla and lemon extract.  Sift together dry ingredients, then add to the sugar mixture. 
 
Roll out and cut.  Bake at 375 degrees for 8-10 minutes.

  2. This recipe is very similar to the one I use. Frosted, rolled sugar cookies are by far a favorite of mine.
